We need to take an active stance on social issues, satisfy consumer demands for ultra-transparency and sustainability and most importantly, have the courage to self-disrupt our own identity and the sources of our old successes in order to realise these changes and win new generations of customers.
“As a designer it is not enough to just present the final plate to the customer. We must take time to explain to them the philosophy of the menu, where the ingredients were sourced and the different recipes we can create from these ingredients. As in the past our best customers will be those with whom we have great communication, who understand us and how they can adapt our products to suit their own tastes.”
